Thinking Thursday: Be not Weary!

I was having a frustrating week last week. Frustrating and tiring. Thinking is this what God has intended life to be? Get up, get dressed, do chores, hang out with kids, go to bed. sometimes go to the mountains? yeah, Crappy attitude, I know!! I came across this awesome scripture from The Doctrine and Covenants, which in the LDS (Mormon religion) is modern day revelation given through Joseph Smith. He is the prophet who restored this church to the earth.

33 Wherefore, be not aweary in bwell-doing, for ye are laying the foundation of a great work. And out of csmall things proceedeth that which is great.

And I thought, Eureka!! I had been praying for answers, inspiration, something to help me continue onward in this journey. Long and never ending at times and wonderful and great at others! This statement is so true in all things. Raising children, Fixing up at house, Making cinnamon rolls, Trying to fix up the backyard (haha). Really, it is the journey, but in the journey are the little things that make the destination great! And they must be done to get to where you want to be!

Homemade scones

I have been on a bread making streak recently! We were watching the Food Network the other day. (Bad to do that at night!) And we decided to make scones. These are the yummiest scones

This recipe comes from my great grandma. My mom made ham, eggs and scones every New Years Eve and we watched Star Wars. It has now switched to Harry Potter. We eat late at night and it is even yummier then! Ok, now I am starving.

If you don't believe me, ask my husband who ate the majority of them in 3 days. He even took them for lunch. Yes, he is a bread junkie.

These are thick and luscious and absolutely delicious with honey butter or chili or anything honestly!

Scones (Makes 25 or so)

½ c. warm water

1 pkg. yeast

½ c. sugar

½ c. butter

2 eggs

1 t. salt

1 ¾ c. warm milk

5 ½ c. flour

Let yeast and water sit for 10 min. Add the rest of ingredients. Knead 10 min. Rise 1 hour. Roll out onto floured surface and cut into rectangles, about the size of a bar donut. Probably want 1/2 inch thickness. Heat oil hotter than the flames of h*^& or at least to 400 degrees. I use a frying pan that you plug into the wall. I am sure you could use a skillet, but just would take longer because it is smaller. Fry for about 45 seconds each side or until brown enough for you.

For rolls-400 for 14 min.

Bloomin' Onion Bread

Yes, this is as good as it looks. It isn't my photo though, it is from The Girl Who Ate Everything who is a gem among cooking sites. I made this for a girly get together when my husband was out of town and lets just say it was gone in 10 minutes.

1 unsliced loaf sourdough bread
12-16 ounces Monterey Jack cheese, thinly sliced
1/2 cup butter, melted
1/2 cup finely diced green onion
2 teaspoons poppy seeds

Directions:
Preheat oven to 350 degrees.

Cut the bread lengthwise and widthwise without cutting through the bottom crust. This can be a little tricky going the second way but the bread is very forgiving.

Place on a foil-lined baking sheet. Insert cheese slices between cuts. Combine butter, onion, and poppy seeds. Drizzle over bread. Wrap in foil; place on a baking sheet. Bake at 350 degrees for 15 minutes.
Unwrap the bread and bake 10 more minutes, or until cheese is melted.
