Cinnamon Bread, can just about be the yummiest fall/winter/spring/summer treat that could ever be. Especially when it tastes like Great Harvest bread and especially when it is all swirly in the middle with cinnamon goodness. Did I mention the crunchy crust? Did I mention there is only a little butter involved and it doesn't hurt the flavor one bit? Plus, it is moist. Oh, the moistness of it all. Enough talking, now for the recipe.
Filling/Topping:
1/2 cup granulated sugar
1/4 cup light brown sugar
5 teaspoons ground cinnamon
Bread:
1 1/2 cups whole milk, heated on stove top to 110 degrees
4 T. unsalted butter, (3 of them melted)
3 large egg yolks
4 1/4 cup AP flour, plus more if needed
2 1/4 t. rapid rise yeast (1 pkg.)
1 T. sugar
1 1/2 t. salt
