Happy Leap Day: Honey Lemon Glazed Carrots

These yummies will make you "leap" with joy. haha. Not only are they super tasty but they are pretty much healthy. When my husband and I were first married, we lived in Idaho. This wonderful older couple, the Seiperts took us under their wings. They invited us to the most delicious roast and potato dinners. She made the best honey glazed carrots. They were like candy! I have never had any as good since. These are a close second. I love the lemon zing. It's a nice twist. I got this recipe from Food Network.

  • 1 pound baby carrots
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Freshly ground black pepper
  • 1/4 cup chopped flat-leaf parsley

Directions

In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots and add back to pan with butter, honey and lemon juice. Cook until a glaze coats the carrots, 5 minutes. Season with salt and pepper and garnish with parsley.
