Fat Friday: Oreo Cheesecake Truffles

Yessir, these bad boys are yummy and so easy!! And so yummy you will slap your grandma (as Paula Deen says) This recipe comes from my friend, Sari who is a dessert fanatic!

1 bag oreos ( i use chocolate double stuffed. I like chocolate, so sue me)
1 block cream cheese (you can use fat free, tastes the same)
Chocolate bark

Grind up oreos. Love that food processor! I had mine for years before I even knew the beauty of it! Mix in cream cheese. Roll into balls. Roll into melted chocolate bark. Eat. Share if you can.

Done and done!!

Who wants to win?! Tell me something really hard you had to do but still did it.

I had to put my 4 year old on the bus for the first time last week to go to preschool. I didn't HAVE to, but I chose to because he loves buses and because it is good for him. But man, these last 2 weeks have been tough having my kids off doing new things and just missing them. But isn't that part of life? Can you see why I need chocolate this week?!=)

Laid my screaming, likely kicking, five-year-old on the ground, straddled her, held down her arms, and replaced the adhesive eye-patch she'd removed because it was uncomfortable. I then held my sobbing child close and wanted to cry myself. (And I'm surprised I didn't then, especially as I am now!)

Kudos to you for actually letting your child ride the bus! I think at least a third of the parents in America still can't do that with their nearly grown kids. ;)

p.s. This one of my fav kinds of recipes--very few ingredients, super fast, absolutely delish (well, looks it anyway), AND I can actually eat it since it works well with a lactose-free substitute!!! (like Tofutti's Better Than Cream Cheese)

p.p.s. Saw your goal to make a cheesecake. Go get Joy of Cooking (the newest edition) and use their New York Cheesecake recipe. My mom tried all sorts of cheesecake recipes and then last of all that one, and we all nearly died when we tried it. It really was just like the gigantic cheesecake my dad had cautiously carried in his arms all the way from New York City to Idaho Falls. I've rarely had cheesecake that good since--except for when I visited the Big Apple myself. (Although, I have to admit that was pre-lactose-intolerance, but I can at least still dream about it, can't I?)

Yes, I have one very awesome Dad--and Mom!!!

Southern Spud, my daughter has to wear an eye patch 4 hours a day. It definitely has it's downs.=) Letting him ride the bus is more out of force than anything, bc I would have to wake up my girls at 645, just to get him there on time. I had to have a lot of encouragement from moms who let their kids ride the bus.=)

One of the hardest things I have even done was potty train Paige! :)

actually the first thing I thought of was getting an MRI for Carter. They had to sedate him. It was really hard.He was so brave for the IV and then the nurse said Okay I am going to give you a shot and its going to really hurt! I was like who the heck says that to a 4 year old!!!!!!!!!!!!!!!!!

I love oreo truffles!

Aw, I thought I had it in the bag. (Although, I was thinking hardest thing I've done LATELY....lame excuse, I know....just being a sore loser!) ;)

As a big fan of chocolate, those look devastatingly good. I can't stand looking at them. I think I'll go have some cookies and milk right now.
