This is my friend, Cora's recipe. I had it at her house, as a leftover even, and it was amazing! My husband isn't a big fan of bbq type burritos, but he loved this! It is so simple and easy to make and sweet. And it's a crockpot recipe. Perfect for busy holiday times!
2 1/2 lbs. pork roast ( I used a regular roast)
1/2 c. water
Put roast in crockpot with water and steak seasoning. Cook on high for 4 hours. Use drippings in sauce.
For the sauce, you need:
1 large can enchilada sauce
1/2 c. brown sugar
1 can black or pinto beans
drippings
Boil 20 minutes
Add roast and sauce and cook for 30 minutes for 350 degrees. Make it like a burrito with cheese and sour cream and other stuff if you want. Honestly, you could eat it with just cheese and it would be awesome!
