Yes, things are very squashy over here this week! Finally the temperatures are below 90 degrees for the first time in 4 months. So, you can bet I am getting the squash out! I made this up in college when my husband I were first married. I worked at Albertsons and acorn squash was always on sale!
Cut the top off of the squash. Scoop out the seeds. Put in 1 T (or whatever) of butter and 1 T of brown sugar. Cook in the microwave for 8-10 minutes. Then cut it open and enjoy!!
I love this! I could eat it for lunch every day!
